Hand picked Madeleine Angevine and Solaris make up the blend for walled garden white, the fruit is picked at the optimum time for balance and phenolic ripeness. Back at the winery, the juice is then slowly fermented at 14 deg C. Once fermentation is complete we rack off the ferment lees and leave on the fine lees for 6 months. The wine is then given a light filtration and bottled.
Aroma – stone fruit, peach, melon, apple and citrus
Taste – good amount of unfermentable sugars have been allowed to create a silky mouthfeel, this is complimented by the stone fruit flavours and melon, grape and fresh apple
Serve – chilled – 10 minutes out of a standard fridge
Food pair – superb on its own, great pair with parma ham, asparagus, fish and chips
